Damn Good Chili

Ingredients
- 2 pounds extra lean ground beef
- 1 pound Italian sausage
- 2 teaspoons olive oil
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 large onion -- chopped
- 3 large cloves garlic -- crushed
- 1 green bell pepper -- chopped
- 1 red bell pepper -- chopped
- 1 yellow or orange pepper -- chopped
- 2 green Jalapeño chili peppers -- seeded and diced
- 2 stalks celery -- chopped
- 4 beef bullion cubes
- 1 1/2 tablespoon cumin
- 5 tablespoons chili powder
- 4 oz barbeque sauce
- 2 15 oz cans tomato sauce
- 30 oz diced tomatoes
- 12 oz can tomato paste
- 15 oz water
- 32 oz canned chili beans with chili sauce
- 15 oz (1 can) cannelli, garbanzo, or butter beans
- 15 oz (1 can) red kidney or black beans
- 12 ounces beer
- 1 tablespoon cornstarch, to thicken, as needed
Directions
Brown meats, drain fats. Sauté onions, garlic, celery, and peppers in olive oil. Add back in meats. Add remaining ingredients, stirring well as you add each item. Simmer for 1-3 hours over low hear, stirring often (can also simmer chili in a crock pot on low). If needed, thicken just before serving by adding the cornstarch to a little water to make a liquid paste, then stir into chili.
