In a large skillet or wok (preferably a non-stick kind), cook and stir onion in oil until tender. Stir in all remaining items, EXCEPT the eggs. Stir and cook for about 10 minutes. Stir in beaten eggs; cook and stir 3-4 minutes more until eggs are cooked firm.
