Fried Rice

Ingredients
- 4 cups rice, cooked -- brown or white
- 2 cups turkey ham -- (precooked) chunked
- 4 tablespoons oil
- 1/2 medium onion - diced
- 12 ounces mixed vegetables, frozen
- 1 5 oz can water chestnuts - drained and thinly sliced
- 3 tablespoons soy sauce
- 3 eggs - beaten
Directions
In a large skillet or wok (preferably a non-stick kind), cook and stir onion in oil until tender. Stir in all remaining items, EXCEPT the eggs. Stir and cook for about 10 minutes. Stir in beaten eggs; cook and stir 3-4 minutes more until eggs are cooked firm.
