Sweet 'N Sour Chicken

Ingredients
- 5 boneless chicken breast halves -- each cut into thirds
- 1/2 medium onion -- minced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder or 1/2 teaspoon fresh garlic -- minced
- 2 tablespoons corn starch
- 3 cups pineapple juice
- 4 tablespoons vinegar
- 5 tablespoons tomato sauce
- 1 tablespoon soy sauce
- 4 tablespoons brown sugar salt and pepper -- to taste
- 1 can pineapple chunks
Directions
Brown chicken breast pieces in large pan or skillet. Remove. Sauté the onion and garlic powder in the olive oil until onions are soft and clear. Add the cornstarch and stir/mix with wooden spoon. Add the pineapple juice, vinegar, tomato sauce, soy sauce and brown sugar. Stir and add salt and pepper to taste. Add chicken back in. Also add the pineapple chucks. Simmer for at least 20 minutes on lowest setting possible (stir often). Serve over rice.
Note: You can use pork in place of chicken. It's also wonderful!
