Chicken Parmesan

Ingredients
- 4 chicken breast halves -- no skin or bones
- 2 eggs -- beaten
- 1 cup fine dry breadcrumbs
- 1/2 cup olive oil
- 2 teaspoons oregano -- ground
- 1 teaspoon basil -- ground
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons garlic powder
- 15 ounces tomato sauce
- 1/2 cup grated parmesan cheese
- 12 ounces mozzarella cheese
Directions
Cut each chicken breast half into two pieces. Cover with plastic and pound each piece thin (about 1/8 to 1/4 inch thick). Put the beaten eggs (add a dash of water to eggs) and breadcrumbs into separate shallow bowls. Dip each chicken piece first into the egg then into the breadcrumbs, Turn chicken to cover thoroughly. Place into a large, heated frying pan (on medium heat) that contains the 1/2 cup oil. Brown and cook the chicken about 5 minutes on one side, turn and repeat on the other side.
Fit cooked chicken pieces together to fit into a 9X13 glass or metal pan that has been sprayed with PAM. Don't overlap the chicken. Combine tomato sauce, salt, pepper, oregano, and garlic powder together. Pour evenly over chicken pieces. Top with both cheeses. Cover with Foil. Bake in a preheated 350-degree oven for 20 minutes. Remove foil and bake 15-20 minutes longer, until golden and just a bit bubbly.
