Pork Loin Casserole

Ingredients
Dough
- 4-boneless pork loin - thick cut
- 1 6 oz package wild rice packaged mix
- 2 cups hot water
- 1 can cream of celery soup
- 2 tablespoons minced onion (green onions or regular onions)
- 1/2 cup milk
- 1/2 teaspoon of pepper
- Optional: 1/3 cup of favorite cheese for topping
Note: no salt is needed - enough is in the rice mix seasoning packet!
Directions
Spray a medium size casserole dish with non-stick spray. In a mixing bowl, combine the hot water, rice, rice mix seasoning packet, and minced onion. Mix well and then pour this mixture into the casserole dish.
Set in/arrange the pork loins pieces in the rice mixture. Sprinkle with pepper. Cover and bake for 45 minutes at 325 degrees.
In a small bowl, combine the milk and can soup together. Pour over the top of rice and pork. Sprinkle cheese over top at this time, if cheese is desired. Bake uncovered for 15 minutes more at 300 degrees.
