Biscotti

Servings size: approximately 30 cookies
Preparation Time: 0:30 min prep + baking time
Ingredients
- 3/4 cup Butter or margarine -- Softened
- 1 3/4 cups granulated sugar
- 4 eggs -- well beaten
- 6 cups flour -- up to six (4-6)
- 5 teaspoons baking powder
- 2 teaspoons anise seed
- 1 tablespoon anise or vanilla extract
- dash salt
- 1/2 cup chopped almonds -- thinly sliced
Directions
Preheat oven to 450. Cream butter and sugar. Add beaten eggs. Sift flour, baking powder, salt. Add gradually to above mixture. Dough should be heavy so as not to stick to hands. Add anise seed, extract and nuts. After mixing, roll out into rolls to fit a cookie sheet. Approx 1 tablespoon per roll. Bake approx 10 minutes. Cut while still hot at a slanted angle.
